Cheeky Monkey Pancake Recipe

I often refer to the kids in my daycare (and my own daughter) as “cheeky monkeys” or “little turkeys.”

It’s a term of endearment when they are just being typical kids and testing boundaries — it lets them know that I still love them and appreciate them, while also serving as a reminder that they are “being cheeky” and should reconsider their actions.

In a cheeky move of my own, I made these cute cheeky monkey pancakes as a easy, healthy snack for the kids.

This snack could easily be a healthy breakfast option for kids, ours were actually made with breakfast leftovers! I always make extra pancakes and either serve them as an easy snack over the next couple of days, or freeze them for later. I use either a 7-grain pancake mix, or make my own protein pancakes (both freeze well), but any pancake recipe will work for this snack – it’s all about the embellishments.

This snack is so easy to make that the kids can actually do it themselves!

Ingredients

  • Pancakes
  • Jam
  • Orange or Clementine
  • Raisins or Craisins

Instructions

Really simple, place one pancake in the center of the plate and attach craisin or raisin eyes with a little bit of syrup or jam to keep them in place. Kids can easily spread the jam directly on the raisin using these butter spreaders, or a short kids’ butter knife.

Have the kids help peel an orange – I love using these orange peelers from Tupperwear with the kids (I’ve never used another brand), they are completely child safe and I even like using them to avoid digging my fingers into someone else’s orange to open it. (And, often if you know a rep, they will give you a few for free!)

Have the kids decide if their monkey will be a frowning monkey or a smiling monkey, and attach the “mouth” orange segment with a bit of jam, and then add two segments for ears.
